Peanut Butter Cinnamon Porridge; YAS!
I have a pretty serious sweet tooth, and I have always been a fan of Oats in the morning. And what could be better than sweet carbs with peanut butter??!! Am I right?
You can't go wrong with Porridge in winter, but why not shake it up a bit and have something a bit more 'la de da.' Keeping up with my Junk Free June business, here is my Peanut Butter Cinnamon porridge.
1/2 cup oats
1/3 cup of nuts and seed mix of your choice (I used Linseed, Chia Seed, Goji Berries, puffed Quinoa, Pepitas)
1 Tsp of Peanut Butter
1/2 tsp of Cinnamon
3/4 cup of water or Almond milk
Maple syrup or honey for sweetness
Mix all of the ingredients in a pot (saving half of the seed and nut mix for topping and the maple syrup) and bring to the boil. Once all of the liquid is absorbed and desired consistency is reached, you're done!
Top with Maple syrup, rest of nut and seed mix, and add some Cacao nibs for some chocolatey goodness.
